Vegan MoFo 2017 Day 24: Finger Foods fit for a Unicorn Tea Party!

Hey. It’s Fluffy the Vegan Unicorn back again!

Unicorns love most finger foods, even though we lack fingers.

However, humans will especially like these unicorn-shaped tea sandwiches. Whether you are having a tea party to honor me with your fanciest and prettiest plates, silverware, desserts, tea, etc., or just like a really simple and delicious vegan tea sandwich, these will be a perfect addition to your sandwich repertoire.

These are so simple they don’t really require a full recipe.

The ingredients are:

Your favorite vegan bread, preferably thinly sliced (Laura used Dave’s Killer Bread’s thin-sliced White Bread Done Right organic bread). Also, make sure the cookie cutters will fit the slices of bread you will be using.

Thinly sliced cucumbers

Tofutti cream cheese

Sriracha, to taste or as needed for decorating.

First, cut two slices of bread with a unicorn cookie cutter. Make sure they face the same direction. Remove any unsightly crumbs or crust that may still be around the cookie cutter. Unicorns like clean edges.

Next, carefully spread a good amount of the Tofutti cream cheese on one side of the unicorn bread.

You can either spread a small amount of sriracha on top of the cream cheese or use the sriracha as a way to decorate the sandwich once it’s fully assembled. Unicorns like to give people lots of options here.

Then, top with cucumber slices. Depending on the shape of the unicorn cookie cutters, you may need to slice some of the cucumber rounds in half to better fit into the sandwich.

Repeat until you have completed your menagerie of unicorn tea sandwiches. I mean, you have enough to serve your tea party guests.

These sandwiches are also really great in kids’ bento lunch boxes, which we will be talking about this Friday for the Vegan MoFo theme of meals for the young (at heart).

Laura has been eating these sandwiches almost every day since she discovered their deliciousness, that I worry she might turn into one!

Vegan MoFo 2017 Day 17: Unicorn Drink

Hi! Welcome to day 17 of Vegan MoFo. Today’s ingredient challenge is “Let’s Get Boozy,” but Unicorns want nothing to do with alcohol. It makes their tummies hurt and they do funny stuff (not good funny) when they consume it. So today, we’re sharing the official drink of unicorns.

It’s called Unicorn Milky Drink. The way it’s made is kinda cool. First, you make a drink mix, then you add 2 tablespoons of the mix into your favorite nondairy milk after it’s been heated up on the stove or in the microwave. It becomes a grayish purple (the color of most unicorns), sweet drink. We topped it with freeze-dried rainbow colored Sweet and Sara marshmallows and put it inside this awesome unicorn mug with a stirrer.

Unicorn Milky Drink Mix

Makes one jar of a flavored hot milk mix, to give as a gift with instructions or use yourself.

You can mix it with vegan milk anytime you want a hot caffeine free drink

Ingredients:

½ cup vegan organic sugar

¾ cup vegan coconut milk powder (be sure there are no dairy ingredients in the brand you buy)

1 tbsp acai powder (for a unicorn worthy purple) or dried raspberry powder (for a unicorn worthy pink)

1 tablespoon vegan non-pareil sprinkles

A Mason Jar for storage

8 oz non-dairy milk, heated until hot mixed with two tablespoons of the mixture, topped with mini vegan marshmallows

Directions:

Stir or place the sugar and coconut milk powder in a food processor and pulse until the two ingredients become one. Add in the acai powder and watch the mix become purple, as if by magic! For a final dose of color, stir in the non-pareil sprinkles. Transfer to a glass mason jar. This makes a great gift for unicorn lovers all over the world. You can also keep it for yourself, which is what I would do. You turn it into a hot drink by heating 8oz of nondairy milk and then adding two tablespoons of the mixture and stirring well. If you can, I recommend adding some mini vegan marshmallows as a topping. Savor each velvety sip. I enjoy this before I go off into a field and slumber, dreaming of shooting stars in the milky way.

New Project! Magic Rainbow Unicorn Party

Hey!

As some readers may or may not know, for the past year I have been studying at the Institute for Humane Education, working towards an M.A. in humane education. Humane education seeks to empower and educate people who can be “solutionaries,” or, people who find solutions to the world’s most pressing problems, which often involve human rights, environmental ethics, and animal protection issues. I went into this program to become a better vegan mentor and educator, as well as learn more about human rights.

I am always looking for ways to encourage people to make healthier, sustainable, and less harmful product choices. Of particular concern to me are labor issues, cruelty towards animals, the amount of waste and pollution that is created from any particular product, etc. That being said, our quests to find these types of products and making our own food and other handmade activities should still be FUN!

Fat Unicorn

Not only that but learning about how to be more ethical and healthier consumers does not have to be boring or painful and upsetting. Being equipped with information and resources presented in a non-threatening way can make a big difference for people and their habits.

So, for my master’s thesis, I am working on writing a cookbook/eco-friendly craft/kid’s party book, with a magical unicorn rainbow theme.

Inside the book will be a cute chubby unicorn sharing facts and resources most likely, among other helpful tidbits.

The reason for her chubbiness is simple,  vegans come in all shapes and sizes, and the size of a person, big or small, should not dictate what kind of a role model they are in the vegan movement. So, this unicorn pays tribute to that concept.

Likewise, what people choose to eat, as long as it doesn’t harm anyone else, is their choice! If they want to eat sugary cookies, or ice cream, or whatever else, they have that right, whether they do it every day or once in a while for a treat. If you are opposed to treating yourself with food, this probably isn’t for you. (Although there will be foods that are more health-oriented as well).

In the next few days, I’ll be sharing with you the details of the first project I tackled for this project. Making your own natural vegan food dyes!
